Shrimp Guacamole Bites Ingredients
  • 1 bag Scoops/Dipper Chips Tostitos Scoops or similar sturdy scoop-shaped tortilla chips
  • 12 ounce Raw Cleaned Shrimp Peeled and deveined
  • 2 teaspoons Taco Seasoning Or to taste
  • 16 ounce Guacamole Store-bought or homemade
  • Fresh Cilantro Optional, for garnish
  • Lime Juice Optional, for garnish

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Lightly grease a baking sheet.
  2. In a medium bowl, toss the cleaned shrimp with the taco seasoning until evenly coated.
  3. Spread the seasoned shrimp in a single layer on the prepared baking sheet.
  4. Bake for 8 to 10 minutes, or until the shrimp turn pink, opaque, and plump. Be careful not to overcook.
  5. While the shrimp are baking, arrange the scoop chips on a serving platter.
  6. Once the chips are ready, carefully spoon a portion of guacamole into each chip.
  7. When the shrimp are done cooking, carefully place one cooked shrimp on top of the guacamole in each chip.
  8. Optionally, garnish with fresh chopped cilantro and a small squeeze of fresh lime juice before serving.

Notes

These bites are best served immediately as the chips can become soggy over time. The cooked shrimp can be stored in the refrigerator and served cold if desired. Feel free to experiment with different taco seasonings or flavored guacamoles.
