  • 2 tablespoons extra virgin olive oil
  • 1-2 tablespoons milk or water to reach desired consistency
  • 1/4 teaspoon black pepper
Hot Honey
  • 1/4 cup honey
  • 1-2 teaspoons chili flakes adjust to your spice preference
Crostini
  • 1 baguette sliced into 1/2-inch thick rounds
  • 2 tablespoons olive oil
  • fresh thyme or oregano optional, for garnish

Method
 

  1. Prepare the Feta: Crumble the feta into a food processor.
  2. Whip It Good: Add the olive oil and black pepper. Process until smooth.
  3. Adjust Consistency: Gradually add milk or water, 1 tablespoon at a time, until the feta is light and fluffy.
  4. Make Hot Honey: In a small saucepan, combine honey and chili flakes. Stir over low heat until the chili flakes are infused, about 2-3 minutes. Remove from heat and let cool slightly.
  5. Toast the Baguette: Brush baguette slices with olive oil. Bake at 375°F (190°C) for 8-10 minutes, or until golden brown and crispy. Alternatively, toast in a toaster or under a broiler.
  6. Assemble: Spread whipped feta on each crostini.
  7. Drizzle: Drizzle generously with hot honey.
  8. Garnish: Sprinkle with fresh thyme or oregano, if desired.
