  • 1/4 cup honey or maple syrup
  • 1/4 cup peanut or almond butter
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup chopped walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, almond flour, cinnamon, and salt.

  3. In a separate bowl, whisk together the honey (or maple syrup), peanut butter (or almond butter), and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix well until combined.
  5. Fold in the chopped dried cranberries and walnuts.

  6. Line a baking sheet with parchment paper.
  7. Drop spoonfuls of the mixture onto the baking sheet, about 1 inch apart.
  8. Gently flatten each spoonful with the back of a spoon.
  9. Bake for 10-12 minutes, or until golden brown around the edges.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
