In a medium bowl, mix together the peanut butter, honey, and vanilla extract until well combined.

Add the coconut flour and sea salt. Stir until a dough forms. If the dough is too sticky, add a tablespoon more of coconut flour.

Roll the dough out onto a lightly floured surface to about 1/4 inch thickness.
Use a heart-shaped cookie cutter to cut out the hearts.
Place the hearts on a baking sheet lined with parchment paper.
If using, melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between, until smooth.

Drizzle the melted chocolate over the hearts.
Refrigerate for at least 30 minutes, or until firm.
