Valentine's Day Cake Batter Fudge

  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain Greek yogurt
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup sprinkles (Valentine’s Day themed!)
  • Red food coloring Optional

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, mix together the cake mix, applesauce, Greek yogurt, melted coconut oil, and vanilla extract.

  3. If desired, add a few drops of red food coloring to achieve the desired hue.

  4. Stir until all ingredients are well incorporated in the bowl.
  5. Pour the mixture into the prepared baking pan and spread evenly.
  6. Generously sprinkle the Valentine’s Day sprinkles over the batter, pressing lightly to adhere.

  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the fudge cool completely in the pan before cutting into squares.
