  • 0.5 pound red cherry tomatoes halved
  • 0.5 pound yellow cherry tomatoes halved
  • 2 avocados diced
  • 1 cucumber sliced
  • 0.33 cup red onion diced
  • 8 ounces small fresh mozzarella cheese balls
Salad Dressing
  • 0.25 cup basil pesto
  • 1 tablespoon lemon juice
  • salt to taste
  • black pepper to taste

Method
 

Instructions
  1. In a large bowl, combine the halved red and yellow cherry tomatoes, diced avocado, sliced cucumber, diced red onion, and small fresh mozzarella cheese balls.
  2. In a small bowl, whisk together the basil pesto and lemon juice to create the dressing.
  3. Pour the basil pesto dressing over the salad ingredients in the large bowl.
  4. Gently toss all the ingredients together until well combined and coated with the dressing.
  5. Season the salad with salt and freshly ground black pepper to your taste. Add more basil pesto if desired for a stronger flavor.
  6. Serve immediately or chill for later. The flavors meld beautifully as it sits.

Notes

This salad can be made ahead of time and is perfect for picnics, potlucks, or as a light meal. For best results, add the avocado just before serving to prevent browning.
