Ingredients
  

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 green bell pepper chopped
  • 1 pound ground beef
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans rinsed and drained
  • 1 (15 ounce) can black beans rinsed and drained
  • 1 (15 ounce) can corn drained
  • 1 packet chili seasoning
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
For Toppings (Optional):
  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Avocado slices
  • Tortilla chips

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and green bell pepper. Cook for another 2 minutes.
  3. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  4. Stir in crushed tomatoes, kidney beans, black beans, corn, chili seasoning, cumin, and smoked paprika.
  5. Bring to a simmer, then reduce heat and cook for at least 30 minutes, or up to 1 hour, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with your favorite toppings.

Notes

For an even deeper flavor, consider browning the ground beef in a separate pan before adding it to the pot. This will allow the meat to develop a richer, more Maillard reaction-driven taste. Also, don't be afraid to adjust the spices according to your preferences. If you like it spicy, add a pinch of cayenne pepper or a dash of hot sauce. Letting the chili simmer for a longer period allows the flavors to meld together beautifully, creating a more complex and satisfying dish.
