  • 12 Medjool Dates pitted
Cream Cheese Filling
  • 4 oz Cream Cheese softened
  • 1 tablespoon Honey
  • 1/4 teaspoon Vanilla Extract
Topping
  • 1/4 cup Pistachios chopped
  • 1 tablespoon Honey for drizzling

Method
 

  1. Gently make a slit lengthwise in each date, being careful not to cut all the way through. Press open slightly.
  2. Combine softened cream cheese, 1 tablespoon of honey, and vanilla extract in a bowl. Mix until smooth.
  3. Spoon or pipe the cream cheese mixture into the center of each date.
  4. Top each filled date with chopped pistachios.
  5. Lightly drizzle honey over the stuffed dates.
  6. Enjoy right away, or refrigerate for later.

Notes

Ensure your cream cheese is adequately softened. Medjool dates are recommended. Consider toasting your pistachios lightly before chopping. Use a light touch when drizzling honey. Experiment with different types of honey. Add a sprinkle of sea salt or a dash of cinnamon.
