- Gently make a slit lengthwise in each date, being careful not to cut all the way through. Press open slightly.
- Combine softened cream cheese, 1 tablespoon of honey, and vanilla extract in a bowl. Mix until smooth.
- Spoon or pipe the cream cheese mixture into the center of each date.
- Top each filled date with chopped pistachios.
- Lightly drizzle honey over the stuffed dates.
- Enjoy right away, or refrigerate for later.
