Preheat your oven to 250°F (120°C). Line a large baking sheet with parchment paper.
In a large bowl, gently mix the Rice Chex cereal, pretzels, M&M's, Sprinkles, and marshmallows until evenly distributed.

In a saucepan over medium heat, melt the butter. Stir in the brown sugar and corn syrup. Bring to a simmer, stirring constantly, until the sugar dissolves.

Remove from heat and stir in the vanilla extract and strawberry gelatin powder until smooth and there are no more lumps, quickly work so the Gelatin doesn't clump.

Pour the strawberry coating over the Chex Mix, mixing gently but thoroughly to coat every piece.
Spread the coated Chex Mix in a single layer on the prepared baking sheet.
Bake for 30 minutes, flipping the mixture halfway through at 15 minutes, stirring occasionally to prevent burning.
Remove from the oven and let cool completely on the baking sheet. The coating will harden as it cools.
Once cooled, break the Strawberry Valentine's Chex Mix into bite-sized pieces. Serve this Strawberry Valentine's Chex Mix and enjoy! Store in an airtight container.
