Strawberry Sweetheart Brownies

Ingredients
  

For the Brownie Batter:
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
For the Strawberry Swirl:
  • 1 cup fresh strawberries finely chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Method
 

  1. Prepare Strawberries: Gently mix the chopped strawberries with 2 tablespoons of sugar and the lemon juice in a small bowl. Set aside to macerate.

  2. Combine Wet Ingredients: In a medium bowl, whisk together the melted butter, 1 cup of granulated sugar, cocoa powder, salt, and vanilla extract until smooth.

  3. Add Eggs: Beat in the eggs one at a time, mixing well after each addition.

  4. Incorporate Flour: Gradually add the flour to the wet ingredients, mixing until just combined. Be careful not to overmix.

  5. Assemble: Pour the brownie batter into a greased 8x8 inch baking pan.
  6. Swirl: Spoon the strawberry mixture randomly over the top of the brownie batter. Use a knife or skewer to swirl the strawberries into the brownie batter. Don't overmix.

  7. Bake: Bake in a preheated oven at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached.
  8. Cool and Serve: Let the Strawberry Sweetheart Brownies cool completely in the pan before cutting into squares. Enjoy!
