Strawberry Cake Truffles Recipe

Delicious and easy to make strawberry cake truffles that are surprisingly healthier than traditional truffles, packed with incredible strawberry flavor.

Ingredients
  

Cake
  • 1 box Strawberry Cake Mix (15.25 ounces)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup water
  • 2 large eggs
Frosting
  • 4 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1/4 cup freeze-dried strawberries finely crushed
Coating
  • 12 ounces white chocolate chips
  • 1 tablespoon coconut oil optional, for smoother melting
  • Sprinkles for decoration (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Lightly grease a 9x13 inch baking pan.
  2. In a large bowl, combine the strawberry cake mix, applesauce, water, and eggs. Mix until just combined - careful not to overmix!

  3. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  4. Let the cake cool completely in the pan.
  5. Once cooled, crumble the cake into a large bowl using your hands or a fork.
  6. In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.

  7. Stir in the finely crushed freeze-dried strawberries into the cream cheese mixture.

  8. Add the cream cheese frosting to the crumbled cake and mix thoroughly until well combined.
  9. Cover the bowl and chill in the refrigerator for at least 30 minutes to allow the mixture to firm up.
  10. Roll the cake mixture into 1-inch balls. Place on a parchment-lined baking sheet.
  11. In a double boiler or microwave-safe bowl, melt the white chocolate chips with the coconut oil (if using) until smooth. Stir frequently to prevent burning.

  12. Dip each cake ball into the melted white chocolate, ensuring it's fully coated. You can use a toothpick or dipping tools for this.
  13. Immediately sprinkle the dipped truffles with sprinkles, if desired.

  14. Place the coated truffles back on the parchment-lined baking sheet and refrigerate for at least 15 minutes, or until the chocolate is set.
