Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie.
Bake for 8-10 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
While the cookies are cooling, whisk together the powdered sugar and lemon juice in a small bowl until you reach a smooth, drizzling consistency. Add lemon zest if desired.
1 cup powdered sugar, 2-3 tablespoons lemon juice, 1/2 teaspoon lemon zest
Once the cookies are completely cool, drizzle the lemon glaze over each cookie.
