Strawberry Baked Donuts

A burst of fresh strawberry flavor nestled in a light, airy doughnut, all without the guilt of frying. These aren't your average treats. They're quick to make, healthier than their fried counterparts, and packed with deliciousness.

Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 large egg
  • 3/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry puree (fresh or frozen)
Glaze (Optional)
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • Chopped fresh strawberries for garnish

Method
 

  1. Preheat: Preheat your oven to 350°F (175°C). Grease a donut pan or spray it with non-stick cooking spray.
  2. Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt. Make sure there are no lumps in the flour.

  3. Mix Wet Ingredients: In a separate bowl, whisk together the egg, milk, melted butter, vanilla extract, and strawberry puree until well combined.

  4. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and gently mix until *just* combined. Be careful not to overmix. A few lumps are okay!
  5. Fill Donut Pan: Transfer the batter to a piping bag or a zip-top bag with a corner cut off. Pipe the batter into the prepared donut pan, filling each cavity about two-thirds full. (An alternative method is to fill a ziplock bag so it can easily be poured into the donut tray.)
  6. Bake: Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the donuts cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
  8. Glaze (Optional): In a small bowl, whisk together the powdered sugar and milk until smooth. Dip the cooled Strawberry Baked Donuts into the glaze and sprinkle with chopped fresh strawberries.
