  • 1 pound dried black eyed peas rinsed and drained
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
Seasonings
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro optional, for garnish

Method
 

  1. In a slow cooker, combine the black eyed peas, onion, garlic, red bell pepper, diced tomatoes, cumin, smoked paprika, cayenne pepper, salt, and pepper. Mix well to combine.

  2. Pour in the vegetable broth and stir to combine.

  3. Cook on low for 8-10 hours or high for 4-6 hours, until the black eyed peas are tender.
  4. When the black eyed peas are tender, taste and adjust the seasoning as needed.
  5. Serve hot, garnished with chopped fresh cilantro if desired.

Notes

Rinse the black eyed peas thoroughly before cooking. For a thicker consistency, mash some of the peas against the side of the slow cooker or puree a portion with an immersion blender. Adjust the cayenne pepper to control the spice level.
