- In a slow cooker, combine the black eyed peas, onion, garlic, red bell pepper, diced tomatoes, cumin, smoked paprika, cayenne pepper, salt, and pepper. - Pour in the vegetable broth and stir to combine.4 cups vegetable broth
- Cook on low for 8-10 hours or high for 4-6 hours, until the black eyed peas are tender.
- When the black eyed peas are tender, taste and adjust the seasoning as needed.
- Serve hot, garnished with chopped fresh cilantro if desired.1/4 cup chopped fresh cilantro
Notes
Rinse the black eyed peas thoroughly before cooking. For a thicker consistency, mash some of the peas against the side of the slow cooker or puree a portion with an immersion blender. Adjust the cayenne pepper to control the spice level.
