- Cook the pasta according to package directions. Drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add the chicken and season with chili powder, cumin, garlic powder, salt, and pepper. Cook until browned and cooked through. Set aside.
- In the same skillet, melt butter over medium heat. Add garlic ad cook for 30 seconds until fragrant.
- Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and heavy cream until smooth. Bring to a gentle simmer, stirring constantly.
- Reduce heat to low and stir in Parmesan cheese until melted and smooth.
- Stir in roasted red peppers, cilantro and adobo sauce (if using). Season with salt and pepper to taste.
- Add the cooked pasta and chicken to the sauce. Toss to coat.
- Serve immediately, garnished with chopped green onions and grated Parmesan cheese. Add a dollop of sour cream for extra creaminess!
Notes
Adobo sauce is optional, for extra spice. Garnish with green onions, Parmesan and/or sour cream.
