  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth

  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Notes

Soaking the peas overnight significantly reduces the cooking time and improves digestibility. For a traditional Southern flavor, consider adding diced ham or bacon/ham hock to the pot at the beginning. Use high-quality spices for the best results.
