  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup long-grain rice rinsed
  • 4 cups chicken broth
  • 1 lemon thinly sliced

  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped

Method

  5. Pour the chicken broth into the slow cooker.
  6. Drizzle olive oil over the ingredients.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
  8. Shred the chicken with two forks and gently stir to combine with the rice and lemon. Serve hot and enjoy!.
