  • 1 pound dried black eyed peas sorted and rinsed
  • 1 pound smoked bacon cut into 1-inch pieces
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 large bell pepper chopped
  • 4 cups chicken broth
  • 1 can diced tomatoes drained
Seasonings
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • Chopped fresh herbs for garnish (optional)

Method
 

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set it aside, reserving about 1 tablespoon of fat in the skillet.

  2. Add the chopped onion, minced garlic, and chopped bell pepper to the skillet and cook until the vegetables are tender, about 5 minutes.

  3. Add the cooked bacon, dried black eyed peas, ground cumin, dried oregano, cayenne pepper, salt, and pepper to the slow cooker. Stir to combine.
