Ingredients
  

For the Beef Tips
  • 2 pounds beef stew meat chuck roast, cut into 1.5-inch cubes
  • 1 can condensed cream of mushroom soup 10.5 oz
  • 1 packet dry onion soup mix 1 oz
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons minced garlic
  • 1 tablespoon tomato paste
  • 1 teaspoon black pepper
For Serving
  • cooked white or brown rice
  • fresh chopped parsley optional, for garnish

Method
 

  1. Combine Ingredients: Place the beef stew meat in the bowl of your slow cooker. In a separate medium bowl, whisk together the cream of mushroom soup, dry onion soup mix, beef broth, Worcestershire sauce, minced garlic, tomato paste, and black pepper until well combined.
  2. Slow Cook: Pour the sauce mixture evenly over the beef tips in the slow cooker and stir to coat all the pieces. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the beef is extremely tender.
  3. Thicken the Gravy (Optional): For a thicker gravy, mix 2 tablespoons of cornstarch with 3 tablespoons of cold water in a small bowl to create a slurry. Stir this mixture into the slow cooker during the last 30 minutes of cooking, allowing the sauce to bubble and thicken.
  4. Serve and Enjoy: When the beef is tender, taste and adjust seasoning if needed. Serve the beef tips and generous amounts of gravy over a bed of fluffy cooked rice, garnished with fresh parsley if desired.

Notes

Beef should be extremely tender when done. For thicker gravy, use cornstarch slurry during last 30 minutes of cooking. Taste and adjust seasoning before serving. Serve immediately over cooked rice.
