Ingredients
  

For the Meat Mixture:
  • 1 pound ground beef
  • 1 medium onion chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chiles (like Rotel) undrained
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Topping:
  • 1 (32 ounce) bag frozen tater tots
  • 1 cup shredded cheddar cheese

Method
 

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.

  3. Add the chopped onion to the skillet with the cooked beef and sauté until softened, about 5 minutes.

  4. Stir in the cream of mushroom soup, diced tomatoes and green chiles, garlic powder, salt, and pepper. Mix well until everything is combined.

  5. Pour the meat mixture into the prepared baking dish, spreading it evenly.
  6. Arrange the frozen tater tots in a single layer over the meat mixture.

  7. Bake in the preheated oven for 45-50 minutes, or until the tater tots are golden brown and crispy.
  8. Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the tater tots.

  9. Return the casserole to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
