  • 1 pound large shrimp peeled and deveined
  • 1 pound smoked sausage such as Andouille or Kielbasa, sliced
  • 1 pound small red potatoes quartered
  • 2 ears corn each cut into 3-4 pieces
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • to taste salt and pepper
  • 2 tablespoons fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potatoes, corn, bell pepper, and onion with olive oil, Cajun seasoning, garlic powder, paprika, salt, and pepper. Mix well to coat evenly.
  3. Spread the seasoned vegetables in a single layer on a large baking sheet.
  4. Bake for 20 minutes.
  5. Remove the baking sheet from the oven and add the sausage and shrimp to the pan. Gently toss to combine with the vegetables.
  6. Return the baking sheet to the oven and bake for another 12-15 minutes, or until the shrimp is pink and cooked through, and the potatoes are tender.
  7. Remove from the oven and garnish with fresh parsley.
