  • 2 ripe medium avocados fleshed and diced
  • 4 ounces feta cheese block, cubed
  • 3 medium Roma tomatoes seeded and diced
  • 1/3 cup red onion diced
  • 2 cloves garlic minced
  • 1/2 cup fresh parsley chopped (or cilantro)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar (or white vinegar)
  • 1/2 teaspoon fine sea salt or to taste

Method
 

Instructions
  1. Ensure avocados are ripe but not overly soft to maintain texture.
  2. Cut the block of feta cheese into small cubes.
  3. In a medium bowl, combine the diced avocado, feta cubes, diced tomatoes, diced red onion, minced garlic, and chopped parsley.
  4. Drizzle with extra virgin olive oil and apple cider vinegar. Sprinkle with sea salt.
  5. Gently fold all ingredients together with a large spoon until just combined. Be careful not to mash the avocado.
  6. Transfer the dip to a serving bowl. Serve immediately with your favorite dipping vehicles like tortilla chips, pita bread, or crackers.

Notes

Store leftovers in an airtight container. To prevent browning, cover the surface of the dip directly with plastic wrap before sealing the container. Leftovers should keep for about 3 days.
