Method
- Preheat your oven to 200 degrees Celsius (390 degrees Fahrenheit).
- Peel potatoes, cut into chunks, and boil in salted water until fork-tender.700 g potatoes
- While potatoes boil, cut sausages into bite-sized pieces.6 pork sausages
- Heat oil in a large pan, fry sausages until browned, then remove and set aside.3 tbsp vegetable oil, 6 pork sausages
- In the same pan, sauté chopped onion and minced garlic until golden.1 red onion, 2 cloves garlic
- Whisk in flour and cook for a minute.1 tbsp plain flour
- Slowly pour in chicken stock, whisking until gravy thickens.250 g chicken stock or broth
- Season gravy with salt, pepper, and Italian herbs.1 tsp salt, 1/4 tsp ground black pepper, 1 tsp Italian dried herbs
- Drain cooked potatoes and place in an oven-safe casserole dish.700 g potatoes
- Top with sausages and drizzle with gravy.6 pork sausages
- Sprinkle grated cheese over the dish.100 g cheddar cheese
- Bake for 20 minutes until bubbling and golden.
- Garnish with parsley before serving.2 tbsp fresh parsley
Notes
Ensure potatoes are fully cooked before baking as the oven time is only for melting cheese. Brown sausages thoroughly before adding to the casserole to prevent excess grease.
