Ingredients
  

Bruschetta Topping
  • 2 cups ripe Roma tomatoes diced
  • 1/4 cup fresh basil leaves chopped
  • 2 cloves garlic minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • to taste Salt and freshly ground black pepper
Bread
  • 1 baguette sliced into 1-inch thick rounds
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic halved

Method
 

  1. In a medium bowl, gently mix together the diced tomatoes, chopped basil, minced garlic, olive oil, and balsamic vinegar. Season with salt and pepper to taste. Let it sit for at least 15 minutes to allow the flavors to meld.

  2. Preheat your oven's broiler. Brush both sides of the baguette slices with olive oil. Place the slices on a baking sheet and broil for 1-2 minutes per side, or until golden brown and slightly crispy. Watch carefully to prevent burning!

  3. Once the bread is toasted, rub the cut side of the halved garlic clove over each slice, infusing it with a subtle garlic flavor.

  4. Spoon the tomato mixture generously onto each toasted bread slice.
