Red Velvet Oreo Truffle Brownies

Ingredients
  

Brownie Layer
  • 1 box red velvet cake mix (15.25 ounces)
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 2 large eggs
Oreo Truffle Filling
  • 8 ounces cream cheese softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 15 Oreo cookies finely crushed, the rest used for garnish

  • Red Velvet crumbs

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. In a large bowl, combine the red velvet cake mix, vegetable oil, water, and eggs. Mix until well combined. Do NOT overmix.

  3. In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Gently fold in the crushed Oreo cookies.

  4. Pour half of the brownie batter into the prepared baking pan. Spread the Oreo truffle filling evenly over the brownie batter. Cover with the rest of the brownie batter.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the brownies cool completely in the pan before cutting into squares. Don't rush it
  7. Drizzle with melted white chocolate and sprinkle some red velvet crumbs for added flavor.
