Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
Wet Ingredients
  • 1 cup buttermilk
  • 1 large egg
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon red food coloring (gel is recommended for vibrant color)
  • 1 teaspoon white vinegar
Optional Cream Cheese Glaze
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and sugar.

  3. In a separate bowl, combine the buttermilk, egg, oil, vanilla extract, red food coloring, and vinegar. Mix well.

  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.

  5. Pour the batter into the prepared loaf pan.
  6. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. For the Cream Cheese Glaze (Optional): In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until combined. Add the milk and vanilla extract, and beat until smooth and creamy.

  9. Drizzle the cream cheese glaze over the cooled loaf.
