Red Velvet Cookies Cream Cheese Frosting

Ingredients
  

For the Cookies:
  • 1 ½ cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 tablespoon red food coloring (liquid or gel)
For the Cream Cheese Frosting:
  • 4 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Beat in the egg and vanilla extract. In a small bowl, combine the vinegar and red food coloring. Add this mixture to the butter mixture and mix well.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

  6. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  7. Bake for 8-10 minutes, or until the edges are set and the centers are slightly soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the cream cheese frosting. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.

  10. Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy.
