For the Red Velvet Brownies:
  • 1/2 cup unsalted butter melted (1 stick)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon red food coloring
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
For the Cream Cheese Frosting:
  • 4 ounces cream cheese softened
  • 1/4 cup unsalted butter softened (1/2 stick)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan.
  2. Melt the butter in a microwave-safe bowl. Stir in the sugar, eggs, and vanilla extract until well combined.

  3. In a separate bowl, whisk together the cocoa powder and red food coloring. Add this mixture to the wet ingredients and mix well.

  4. In another bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

  5. Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  6. Let the brownies cool completely in the pan before frosting.
  7. In a large bowl, beat the softened cream cheese and butter until smooth and creamy.

  8. Gradually add the powdered sugar, beating on low speed until combined. Stir in the vanilla extract.

  10. Once the brownies are cooled, frost generously with the cream cheese frosting. Cut into squares and serve. Enjoy!
