Raspberry Brownie Parfaits

A decadent and healthy dessert that is quick to assemble and packed with flavor.

Ingredients
  

For the Brownie Crumble:
  • 1 box of your favorite brownie mix (about 14 ounces) or use a homemade recipe
  • Ingredients as called for on the brownie mix box typically eggs, oil, and water
For the Raspberry Parfait Filling:
  • 2 cups fresh raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup plain Greek yogurt 0% or 2% fat
  • 1/4 cup honey or maple syrup adjust to taste
Optional:
  • fresh mint leaves for garnish

  • Glasses or Jars

Method
 

  1. Bake the Brownies: Prepare the brownie mix according to the package directions. Bake in a greased baking pan until a toothpick inserted in the center comes out mostly clean. Let cool completely.

  2. Make the Raspberry Sauce: In a saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the sauce thickens slightly (about 5-7 minutes). Remove from heat and let cool.

  3. Prep the Yogurt: In a bowl, mix the Greek yogurt with the honey or maple syrup until well combined. Adjust the sweetness to your liking.

  4. Crumble the Brownies: Once the brownies are cool, crumble them into small pieces.
  5. Assemble the Parfaits: In individual glasses or jars, layer the brownie crumbles, raspberry sauce, and sweetened Greek yogurt. Repeat the layers until the glass is full.
  6. Chill (Optional): For a cooler treat, chill the parfaits in the refrigerator for at least 30 minutes before serving.
  7. Garnish and Serve: Garnish with fresh raspberries and mint leaves, if desired. Enjoy!
