Ingredients
  

  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can black-eyed peas 15 oz, rinsed and drained
  • 2 cups vegetable broth
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/4 cup fresh parsley chopped, for garnish
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened, about 5 minutes.

  2. Add minced garlic and cook for another minute until fragrant.

  3. Stir in the rinsed and drained black-eyed peas, vegetable broth, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper to taste.

  4. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook black eyed peas from scratch for 20-25 minutes, or until the flavors have melded and the peas are tender.
  5. Remove from heat, stir in fresh parsley, and serve warm. Enjoy your cook black eyed peas from scratch!

Notes

For extra flavor, you can add a bay leaf to the pot while simmering and remove before serving. You can also add diced bell peppers or celery along with the onion.
