Ingredients
  

For the Dip
  • 1 package frozen spinach, thawed and squeezed dry 10-ounce
  • 1 can artichoke hearts, drained and chopped 14-ounce
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes optional
  • salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the squeezed spinach, chopped artichoke hearts, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, minced garlic, and red pepper flakes (if using).
  3. Season with salt and pepper to taste. Mix well to ensure all ingredients are evenly distributed.
  4. Transfer the mixture to an oven-safe baking dish or skillet.
  5. Bake for 20-25 minutes, or until the dip is heated through and the cheese is melted and bubbly.
  6. Remove from the oven and let cool slightly before serving.

Notes

Use full-fat mayonnaise and sour cream for an extra creamy dip. Be sure to squeeze the spinach thoroughly to remove excess moisture and prevent a watery dip. For a different flavor, experiment with cheeses like Gruyere or Asiago. To prevent over-browning, cover the dish with foil for the first 15 minutes of baking, then remove for the last 5-10 minutes. For a quicker option, microwave on high for 5-7 minutes, stirring halfway through. This dip can also be served cold after chilling for an hour.
