  • 2 scoops vanilla protein powder
  • 1 teaspoon pumpkin pie spice or cinnamon
  • 1/2 cup creamy almond butter
  • 1/3 cup real pumpkin puree
  • 1/4 cup raw honey or pure maple syrup

Method
 

  1. In a large mixing bowl, combine the rolled oats, vanilla protein powder, pumpkin pie spice, almond butter, pumpkin puree, and your choice of liquid sweetener. You can also use a food processor if you prefer a smoother texture.

  2. Use a small cookie scoop to portion out the mixture. This recipe should yield approximately 24 small bites.
  3. Use your hands to roll each portion into a smooth, round ball. Place them on a plate or a baking sheet lined with parchment paper.
  4. Place the balls in the freezer for about 10 minutes. This helps them firm up and hold their shape perfectly.

Notes

If your mixture feels too dry, add an extra tablespoon of pumpkin puree, or add more oats if it is too sticky. Store these bites in the refrigerator for up to 4 days or freeze them for up to 3 months.
