  • 8 ounces cream cheese, softened
  • 4 ounces goat cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon garlic powder
Coating
  • 1 cup pomegranate arils
  • 1/4 cup chopped pecans or walnuts optional

Method
 

  1. In a large bowl, combine cream cheese, goat cheese, cheddar cheese, red onion, parsley, and garlic powder.
  2. Mix well until everything is thoroughly combined.
  3. Form the cheese mixture into a ball shape.
  4. Wrap it tightly in plastic wrap and refrigerate for at least 2 hours to firm up.
  5. Just before serving, remove the cheese ball from the refrigerator and unwrap it.
  6. Evenly coat the cheese ball with pomegranate arils and chopped pecans/walnuts, gently pressing them into the cheese.
  7. Serve immediately or return to the refrigerator until ready to serve.

Notes

For the creamiest cheese ball, ensure your cream cheese and goat cheese are fully softened before mixing. Don't be afraid to adjust the amount of garlic powder based on your preference. When coating the cheese ball, gently press the pomegranate arils and nuts to ensure they adhere well. If preparing in advance, wait until just before serving to add the pomegranate to prevent the arils from bleeding. Experiment with different nuts or add a sprinkle of chopped fresh rosemary for an extra layer of flavor. Serve with crackers, baguette slices, crostini, or fresh fruits like apple and pear slices.
