Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs plain or Italian seasoned
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
For the Vegetables
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 zucchini chopped
  • 1 red onion sliced
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. In a shallow dish, combine Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.

  3. Drizzle chicken breasts with 2 tablespoons of olive oil. Then, press each chicken breast into the Parmesan mixture, ensuring it's evenly coated.

  4. In a large bowl, toss chopped bell peppers, zucchini, red onion, and broccoli florets with 2 tablespoons of olive oil, salt, and pepper.

  5. Spread the vegetables evenly on the prepared sheet pan. Place the Parmesan-crusted chicken breasts on top of the vegetables.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. Internal temperature for chicken: 165°F (74°C).
