Ingredients
  

Corn Base
  • 2 cups frozen corn thawed
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 4 ounces cream cheese softened
Flavor Boosters
  • 1/2 cup red bell pepper diced
  • 1/2 cup green onions sliced
  • 1/4 cup pickled jalapeños diced if preferred
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
Optional Garnishes
  • Fresh cilantro chopped
  • Shredded cheddar cheese

Method
 

  1. In a large bowl, combine the thawed corn, mayonnaise, sour cream, and softened cream cheese. Be sure to fully incorporate everything together before moving on.
  2. Add the diced red bell pepper, sliced green onions, diced jalapeños (if using), chili powder, cumin, and garlic powder to the bowl.
  3. Mix all ingredients thoroughly until evenly distributed.
  4. Season with salt and pepper to your liking. Keep in mind, the jalapeños may already add saltiness to the dip.
  5. Cover and refrigerate for at least 30 minutes to allow all the flavors to meld together. This step is crucial!
  6. Before serving, garnish with fresh cilantro and a sprinkle of shredded cheddar cheese, if desired.
  7. Serve with your favorite tortilla chips, crackers, or even fresh vegetables.

Notes

For the best results, make sure your cream cheese is REALLY soft. Use fresh veggies to maximize freshness and taste. Don't be afraid to play around with the spiciness. If you like things hot, add a little more jalapeño or a dash of cayenne pepper. Canned corn can replace frozen kernels (drain all liquid before mixing). A squeeze of lime juice adds a zesty brightness. Stir occasionally while refrigerating to ensure the flavors truly harmonize. The longer it sits, the more delicious it gets!
