Ingredients
  

For the Chicken:
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
For the Vegetables:
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 zucchini chopped
  • 1 red onion sliced
  • 1 pint cherry tomatoes halved
For the Balsamic Glaze:
  • ¼ cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tbsp chopped fresh basil optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with olive oil, Italian seasoning, garlic powder, salt, and pepper.

  3. Spread the chopped bell peppers, zucchini, red onion, and halved cherry tomatoes in a single layer on a large baking sheet.

  4. Distribute the seasoned chicken pieces evenly over the vegetables.

  5. In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, and minced garlic.

  6. Pour the balsamic glaze evenly over the chicken and vegetables.

  7. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Garnish with fresh basil (if using) and serve immediately.
