Ingredients
  

  • 1 lb Mini potatoes washed and dried
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 4 oz Sour cream
  • 4 oz Shredded cheddar cheese
  • 2 Green onions thinly sliced
  • 4 slices Bacon cooked and crumbled

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss Mini potatoes with olive oil, salt, and pepper in a bowl.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Bake for 20-25 minutes, or until tender and easily pierced with a fork.
  5. Remove from oven and let cool slightly.
  6. Top with sour cream, cheddar cheese, green onions, and crumbled bacon.
  7. Serve immediately and enjoy!

Notes

Don't overcrowd the baking sheet to ensure the Mini Baked Potatoes roast evenly. For extra flavor, consider adding garlic powder or paprika to the olive oil mixture before roasting. Experiment with different cheeses; pepper jack or Gruyere would be excellent alternatives. If you're short on time, microwave the potatoes for a few minutes before baking to speed up the cooking process. For a vegan option, use plant-based sour cream and cheese, and skip the bacon or replace it with crispy tofu bacon bits. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave. Remember to add the toppings just before serving to prevent them from becoming soggy.
