Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and slice sweet potato into 1/4-inch thick rounds.
  3. Toss sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange rounds in a single layer on a baking sheet.
  5. Bake for 20-25 minutes, flipping halfway until tender.
  6. Drizzle honey over the baked sweet potato rounds.
  7. Top with crumbled feta cheese.
  8. Return to oven for 2-3 minutes, until feta is slightly softened.
  9. Garnish with fresh thyme (optional) and a drizzle of honey.
