Ingredients
  

  • 1 pound ground beef
  • 1 onion chopped
  • 1 cup chopped dill pickles or sweet pickles
  • 1 cup shredded Cheddar cheese
  • 1 tablespoon prepared yellow mustard or to taste
  • 1 package egg roll wrappers 16 ounce
  • 1 cup vegetable oil for frying

Method
 

  1. Place the ground beef and chopped onion in a large skillet over medium heat. Cook and stir for about 10 minutes, breaking up the beef into small crumbles as it browns. Once fully cooked, drain the excess grease and transfer the mixture to a large bowl.

  2. Stir the chopped pickles, shredded Cheddar cheese, and yellow mustard into the beef mixture. Mix everything together thoroughly until the cheese begins to melt and the ingredients are well combined.

  3. Prepare your workspace by lining a baking sheet with parchment paper and placing a small bowl of water nearby. Open the egg roll wrappers and cover the stack with a damp paper towel to prevent them from drying out while you work.

  4. Place one egg roll wrapper on your work surface with one corner pointing toward you (diamond shape). Place approximately 1/4 cup of the cheeseburger filling in the center.
  5. Fold the bottom corner up over the filling, then tuck in the side corners as you roll the wrapper tightly toward the top corner. Moisten the top corner with a little water using your finger and finish rolling to create a tight seal. Ensure there are no gaps where the filling could leak out.
  6. Place the assembled egg rolls on the parchment-lined baking sheet and keep them covered with a damp paper towel while you finish the rest of the batch.
  7. Heat the vegetable oil in a deep saucepan or deep fryer until it reaches 365 degrees F (185 degrees C).

  8. Carefully place 2 or 3 egg rolls into the hot oil at a time. Fry for 4 to 5 minutes, turning once, until they are golden brown and crispy on all sides.
  9. Use tongs to remove the egg rolls from the oil and let them drain on a plate lined with paper towels before serving.

Notes

Ensure your oil is at the correct temperature (365°F) before frying to prevent the wrappers from absorbing too much grease or burning. Always keep your unused egg roll wrappers covered with a damp cloth to prevent them from drying out and cracking.
