Activate the yeast: In a large bowl, dissolve the yeast and sugar in warm water. Let stand for 5-10 minutes until foamy.

Combine wet ingredients: Add the salt and olive oil to the yeast mixture. Mix gently.

Add flour: Gradually add the flour, one cup at a time, mixing until a soft dough forms.

Knead the dough: Turn the dough out onto a lightly floured surface and knead for 6-8 minutes, until smooth and elastic.
First rise: Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Shape the hearts: Punch down the dough. Roll it out to about 1/2 inch thickness. Use a large heart-shaped cookie cutter to cut out as many hearts as possible.
Second rise: Place the heart-shaped rolls on a baking sheet lined with parchment paper. Cover and let rise for 30 minutes.
Preheat the oven: Preheat your oven to 375°F (190°C).
Bake: Brush the tops of the rolls with melted butter. Sprinkle with sesame or poppy seeds if desired. Bake for 15-20 minutes, or until golden brown.
