Heart Jam Thumbprint Cookies

Ingredients
  

For the Cookies:
  • 1/2 cup unsalted butter softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract optional
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
For the Filling:
  • 1/2 cup your favorite jam (strawberry, raspberry, or cherry work great!)
  • Powdered sugar for dusting (optional)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Beat in the vanilla extract, almond extract (if using), and egg until well combined.

  4. In a separate bowl, whisk together the flour and salt.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

  6. Roll the dough into 1-inch balls.
  7. Place the cookie dough balls on an ungreased baking sheet.
  8. Use your thumb (or the back of a teaspoon) to make an indentation in the center of each cookie.
  9. Fill each indentation with about 1/4 teaspoon of your favorite jam.

  10. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  12. Dust with powdered sugar before serving.
