Method

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, rice vinegar, olive oil, minced garlic, ground ginger, and red pepper flakes (if using).
1/2 cup Pineapple Juice, 1/4 cup Soy Sauce (low sodium), 2 tablespoons Brown Sugar, packed, 1 tablespoon Rice Vinegar, 1 tablespoon Olive Oil, 1 clove Garlic, minced, 1/2 teaspoon Ground Ginger, 1/4 teaspoon Red Pepper Flakes
  2. Place the chicken cubes in a resealable bag or container. Pour the marinade over the chicken, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.

  3. If using skewers, thread chicken, pineapple chunks, and red bell pepper pieces onto the skewers, alternating ingredients.
