  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1.5 lbs Yukon gold potatoes peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
For the Garlic Parmesan Sauce:
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons chopped fresh parsley for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the chicken and potatoes with olive oil, salt, pepper, Italian seasoning, and garlic powder. Make sure everything is well coated.
  3. Spread the chicken and potatoes in a single layer on a large baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. While the chicken and potatoes are baking, prepare the garlic parmesan sauce.
  6. In a medium saucepan, melt the butter over medium heat.
  7. Add the minced garlic and cook for 1-2 minutes, or until fragrant. Be careful not to burn the garlic.
  8. Pour in the chicken broth and bring to a simmer.
  9. Reduce the heat to low and stir in the Parmesan cheese and heavy cream. Simmer for 2-3 minutes, or until the sauce has thickened slightly.
  10. Once the chicken and potatoes are cooked, remove them from the oven and transfer them to the saucepan with the garlic parmesan sauce.
  11. Gently toss to combine, ensuring the chicken and potatoes are well coated with the sauce.
  12. Serve immediately, garnished with fresh parsley, if desired.
