- Prepare the Potatoes: Start by washing and peeling the russet potatoes. Cut them into small, even cubes.4 to 5 medium-sized Russet potatoes
- Season the Potatoes: In a bowl, toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika. Ensure every piece is well-coated with the oil and spices.Olive oil, Salt, Black pepper, Garlic powder, Paprika
- Air Fry the Potatoes: Place the potatoes in the air fryer at 400 degrees F. Cook for approximately 25 minutes, making sure to shake the basket at least twice during the process to ensure even crispiness.
- Prepare the Chicken: While the potatoes are cooking, cut the chicken breasts into bite-sized cubes.1 lb Chicken breasts
- Sear the Chicken: Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and season with 1/2 teaspoon each of salt and pepper, and 1 teaspoon each of paprika, onion powder, and Italian seasoning.2 tablespoons Butter, 1/2 teaspoon Salt, 1/2 teaspoon Black pepper, 1 teaspoon Paprika, 1 teaspoon Onion powder, 1 teaspoon Italian seasoning
- Add Aromatics and Sauce: Once the chicken is fully cooked, stir in the minced garlic and the Buffalo Wild Wings Garlic Parmesan Sauce. Use just enough sauce to thoroughly coat the chicken pieces.1 to 2 tablespoons Minced garlic, Buffalo Wild Wings Garlic Parmesan Sauce
- Combine: Add the crispy air-fried potatoes into the skillet with the chicken. Stir everything together so the flavors meld.
- Melt the Cheese: Sprinkle the shredded mozzarella cheese over the top. Place the skillet under the oven broiler for a few minutes until the cheese is bubbly and golden, or simply cover with a lid on the stovetop until melted.1 cup Shredded mozzarella cheese
- Garnish and Serve: Top with dried parsley and an extra drizzle of sauce if desired.Dried parsley
Notes
For the best results, grate your own mozzarella cheese from a block rather than using pre-shredded to ensure a smooth melt. Be careful not to overcrowd your air fryer basket so the potatoes crisp up rather than steam.
