  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste
  • 17.6 ounce package potato gnocchi
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups chopped fresh spinach

Method
 

  1. Season chicken with salt, pepper, and Italian seasoning.

  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

  3. Add garlic to the skillet and cook until fragrant, about 1 minute.

  4. Stir in chicken broth and bring to a simmer. Add gnocchi and cook according to package directions, usually around 3-5 minutes, or until gnocchi are tender.

  5. Stir in heavy cream, Parmesan cheese, and cooked chicken. Heat through.
