- Set your oven to 375°F (190°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spatula as it cooks—this should take about 7–8 minutes.1 tbsp olive oil, 1 lb ground beef
- Stir in the Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix well to ensure the spices are evenly distributed, then remove from heat. - In a small bowl, combine the melted butter with the minced garlic. Stir well and set aside to let the flavors infuse.0.25 cup butter, 3 cloves garlic
- Lay the flour tortillas flat on a clean work surface. Evenly distribute the seasoned beef mixture over each tortilla, then top generously with the shredded cheddar and mozzarella cheese.4 large flour tortillas, 0.5 cup shredded cheddar cheese, 0.5 cup shredded mozzarella cheese
- Roll each tortilla tightly, tucking in the sides to secure the filling. Place them seam-side down on the prepared baking sheet. Brush the tops and sides generously with the prepared garlic butter. Bake for 12–15 minutes, until the rollups are golden brown and the cheese inside is melted and bubbly.
- Let the rollups cool slightly before slicing them into pinwheels, if desired. Garnish with sliced pickles and serve while warm.sliced pickles
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To maintain the crispy texture, reheat in the oven or an air fryer at 350°F until warmed through.
