Method
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil to ensure the tortillas do not stick and to make cleanup easier.
- Lay the flour tortillas out on a clean flat surface. Place a portion of the roast beef and one slice of cheese onto each tortilla; add optional ingredients like onions or jalapeños now.6 medium flour tortillas, 12-14 oz roast beef, 6 slices provolone or Swiss cheese, 1/2 cup caramelized onions, 6-8 thin jalapeño slices, 1/4 cup cheddar cheese
- Roll each tortilla up tightly, similar to how you would roll a burrito, but leave the ends open. Place them seam-side down on the prepared baking sheet.
- In a small bowl, combine the melted butter and garlic powder. Use a pastry brush to coat the tops of each roll up generously with the butter mixture.2 tablespoons melted butter, 1 teaspoon garlic powder
- Place the baking sheet in the oven and bake for 10 to 12 minutes. You want the cheese to be fully melted and the edges of the tortillas to turn crisp and golden.
- While the roll ups are in the oven, prepare the dipping sauce following the instructions on the au jus seasoning packet using water or beef broth. Simmer until smooth and slightly thickened.1 packet au jus mix
- Remove the roll ups from the oven and slice them in halves or thirds. Serve them immediately while hot with a side of the warm au jus dipping sauce.
Notes
Use very thinly sliced roast beef so the rolling process is easier and the meat heats through evenly. Always place the roll ups seam-side down on the pan to act as a natural seal so you do not need toothpicks.
