  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1/4 cup soy sauce low sodium
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sriracha or more to taste
  • 1/2 teaspoon red pepper flakes optional
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • Cooked rice for serving
  • Toppings: chopped green onions, sesame seeds, shredded carrots, or avocado slices

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground chicken, breaking it up with a spoon. Cook until browned.

  2. Add minced garlic and grated ginger to the skillet. Cook for about 1 minute, until fragrant.

  3. In a small bowl, whisk together soy sauce, honey, rice vinegar, sriracha, and red pepper flakes (if using).

  4. In another small bowl, whisk together water and cornstarch until smooth.

  5. Pour the soy sauce mixture and cornstarch slurry into the skillet with the chicken. Bring to a simmer, stirring constantly until the sauce thickens, about 2-3 minutes.
  6. Serve Firecracker Ground Chicken Bowl over cooked rice. Top with your desired toppings, like chopped green onions, sesame seeds, shredded carrots, or avocado slices. Enjoy immediately!
