Ingredients
  

  • 1 lb ground beef
  • 1 package taco seasoning 1-oz
  • 1 can diced tomatoes and green chiles 10-oz, undrained
  • 2 cups shredded cheddar cheese
  • 1 bottle ranch dressing 8-oz
  • 5 packages frozen phyllo tart shells 15-count

  • 12-inch non-stick skillet
  • Meat masher tool
  • Large Mixing Bowl
  • Rimmed Baking Sheet

Method
 

  1. Preheat your oven to 350ºF to ensure it is ready for baking.
  2. In a 12-inch non-stick skillet, cook the ground beef over medium-high heat until it is no longer pink. Drain the excess fat thoroughly.

  3. Add the taco seasoning and the entire can of diced tomatoes and green chiles (including the liquid) to the skillet. Stir well and cook for 5 minutes to allow the flavors to meld. Remove the skillet from the heat.

  4. In a large mixing bowl, combine the cooked taco meat mixture, the shredded cheddar cheese, and the bottle of ranch dressing. Stir until everything is evenly coated.

  5. Place the frozen phyllo tart shells on a rimmed baking sheet. Spoon the meat and cheese mixture into each shell until full.

  6. Bake the tarts for 8 to 10 minutes, or until the cheese is melted and bubbly. If you are baking these from a frozen state, add 2 to 3 minutes to the total baking time.

Notes

Use a meat masher while cooking the beef to create fine crumbles that fit easily into the small phyllo shells. You can freeze the assembled, unbaked tarts and bake them directly from the freezer when guests arrive.
