  • 4 large bell peppers any color
For the Filling:
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 14.5 ounce can diced tomatoes undrained
  • 8 ounce can tomato sauce
  • 1 cup cooked rice white or brown
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese or any favorite cheese

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peppers: Cut the tops off the bell peppers and remove the seeds and membranes.
  3. Brown the beef: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess grease.
  4. Sauté aromatics: Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Combine ingredients: Stir in the diced tomatoes, tomato sauce, cooked rice, oregano, salt, and pepper. Mix well.
  6. Stuff the peppers: Spoon the ground beef mixture into each bell pepper, filling them to the top.
  7. Add cheese: Sprinkle the cheese over the top of each stuffed pepper.
  8. Bake: Place the stuffed peppers in a baking dish and bake for 30-40 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Rest: Let the stuffed peppers rest for a few minutes before serving.
